You know you may have a 10 gigabit fiber line with crazy low latency, that doesn't even come into play until your DNS gives you the IP associated with the URL you just typed in. I found the current results a little contrary to what some discussions would like you to believe. FYI I'd rather stay off the Internet than use Cloudflare's DNS. Phooey on Cloudflare, they are trying to control the Internet. F' them.

Here's a good site if you want to really get into the DNS system and it's performance

Another good site the free version is a bit limited and has surprises, gotta pay da bills (watch out the popups and notifications, all scams and spam but you are a savvy user I hope).

I get a great speed from adguard and a little protection too.

Funny thing, many security providers offer their own filtered DNS. If you look at their speeds some suck.

Another thing to consider is privacy. A few DNS will track your surfing habits and sell those numbers to vendors who then target you. DNS used to be use your ISP's DNS and fuhgeddaboudit. I am not going down that easy. Privacy is a huge concern for me these days.
